2019 Gray Burgundy, dry, three-star, from a wooden barrel

Thanks to a significant reduction in yield, the grapes were able to ripen to high quality. The wine was stored in a new wooden barrel during fermentation and then matured for 10 months in a larger wooden barrel (not a barrique!) with multiple layers. As a result, the powerful wine character was “ensnared” with a subtle woody note. A special kind of taste experience.
Drinking recommendation: stronger dishes such as fried poultry, braised rabbit, fried pork chops, strong cheeses

While my father mainly farmed vegetables and arable land, we began converting to a winery after taking over in the early 1990s. The varieties Müller-Thurgau, Pinot Noir, Pinot Gris, Pinot Blanc, Muscat, Riesling, Sauvignon Blanc and Regent, as well as various newer varieties (“Piwis”) are grown. These varieties are usually made into hearty dry wines without chaptalization and often with the wine's own yeast flora.
